Improbable Cause/The Die is Cast.
The interplay between Garak and Odo is brilliant, and its great to see how their relationship has changed in The Way of the Warrior.

I'll nominate What You Leave Behind. Cheaped out on the battle via stock footage? Yes. But one of the best "goodbyes" in my opinion.

The Visitor.
I normally enjoy more lighthearted and fun episodes like Trials and Tribble-ations but "The Visitor" is for DS9 what was "The Inner Light" for TNG. A truly remarkable episode the likes of which I am hard pressed to compare to anything we see on today's shows. Maybe I am getting emotionally dull as I am getting older but I cannot really think of many other TV-Show episodes nowadays which are equally brilliant and touching.
