On a tangent, what's wrong with conch? I've never had it raw, but it's damn tasty in chowder or fritters.

Fried or otherwise cooked, it's great. I had some raw at a sushi restaurant once, and I do not care to repeat the experience...

I was always suspicious of any type of sushi that contained fish that was in no way nearly native to Japanese or Korean waters.

However, Key West is almost built on conch - they refer to it as the "Conch Republic," and they make some damn fine conch dishes.
