Seriously, I don't think I've heard Neelix give any good advice.

IIRC, and it's been a while, the culture he used to make his cheese just happened to be an amazingly aggressive and virulent one.

Um, not it isn't. Cheese is made using bacteria, but it is not bacteria. If it was bacteria, there would be no dairy value.
