Cheese is bacteria; the kind he bought was apparently rather aggressive.

Like the time I left some cheddar in the fridge for a year.

IIRC, and it's been a while, the culture he used to make his cheese just happened to be an amazingly aggressive and virulent one.

Um, not it isn't. Cheese is made using bacteria, but it is not bacteria. If it was bacteria, there would be no dairy value.
