I'd call the mining of the wormhole less of erecting a defensive position and more of blockading a major route. It'd be like someone minging the panama cannal.
to be more accurate it'd be more like the US blockading the canal (back when we still owned it), not exactly an act of war if you closing off something you own from enemy use.
Still, they were taking an active role in preventing the dominion from using the only viable route they had to the area, the dominion could hardly just be expected to sit on their ass and go " Well damn, they showed us." Moves like that pretty much demand a responce, like the Cuban Missile Crisis. It may not be an act of direct aggression, but you can't reasonably ignore it.

Remember the UFP doesn't own the Wormhole anymore then the US owns the English Channel. It belongs to the Profits who are in the Bajoran system on what is supposed to be a free trade rout open to anyone. Throwing mines along that route forced the Dominion to attack. There just wasn't a choice.

It'd be more like blockading the Seuz canal. It's very important for trade, and blockading it is going to piss a lot of people off.

Ever heard of the Yellow Fleet? I imagine that made people pretty angry, yeah.

Technically they didn't have to do anything, they could have just stayed in the Gamma Quadrant ;)

lol, but I get the idea.
In the beginning the Universe was created. This has made a lot of people very angry and been widely regarded as a bad move.

The UFP was expanding into the GQ, which happen to be something the Dominion told them NOT TO DO. The UFP of course went the "We're the good guys so we can do anything" plan. The Dominion got pissed and wiped out the UFP holdings as a warning.

Were they expanding, I was only aware of their Exploration, I didn't know they were actually acquiring territory, in that case ya...it is looking more and more aggressive.

The UFP was moving settlers to the GQ against the Dominion's warnings. How would England respond if the US just showed up and started claiming parts of lands for its people?

"Now, now. That's just uncalled for. Desist immediately, or we shall be forced to protest further."

Seriously, the Bajorans had a colony on the other side.

Like having unarmed cops. "Stop! Or I'll... stay 'stop' again, only louder."

Reminds me of a line from this about the U.N.

"Wait a minute, you don't have an army!"
