I'm really feeling the love for the Galaxy :P
What does defeat mean to you?

Nothing it will never come. Death before defeat. I don’t bend or break. I end, if I meet a foe capable of it. Victory is in forcing the opponent to back down. I do not. There is no defeat.

NX Class. As cramped as the Defiant, and yet infinitely less awesome.

Of course, since this is probably a 24th century discussion, definitely Freedom Class.

Does that depend when you're using it? I wouldn't want to be in one during the dominion war, but they seem alright for TOS.

I'm throwing my hat in for the Raven-class. I wouldn't command anything without at least basic defensive weapons.

It is my honor to commission you, Captain Tsukiyumi, captain of this vessel, a Raven-class starship, the U.S.S. Unarmed.

More like USS Victim...

Computer, initiate self-destruct sequence, and activate transporter protocol Nine-one-Alpha.

*beams to nearby runabout, a much more capable design*

What's really funny, is that a lot of people seem to generally favor the idea of going pure role... some all combat, some all non-combat, yet NO ONE Likes the idea of an unarmed ship. :) Don't blame them of course.
