Well we know that in Trek universes "branch" every time a decision is made, like in Parallels. The Mirror Universe Kirk visited is one such line that branched off from ours at some point in the past. It absolutely should continue branching over time after Kirk leaves. So really there will be many different versions of the mirror universe in existence where Kirk visited, and then it took one course or another afterwards.
So really there's no reason why the DS9 and the Diane Duane versions of the MU shouldn't both exist.
Personally I think the DS9 version of the MU sucked ass. It missed the whole point of the MU. The Enterprise version rocked, though, and got it exactly right. So did Duane's version.
