IIRC, the only battle VOY had with one of the large Kazon/Trabe vessels resulted in VOY doing only moderate damage to the Kazon vessel, which was then taken out by Chakotay ramming his Maquis ship into it.
That said, a Sov should be more than capable of handling it.

Well, that gives us some inkling of their power in that case. Though wasn't VOY crippled at that point due to sabotage, or something?

So then, maybe each of those ships is about equal in combat to Voy. How many Voy could a Sov take out before having to put thought into it?

I think 5 would be streching it. If it was tag team maybe, one after another, but all once 5 on one would be a bit much.
