They were spoon fed the tech for it, they did the building themselves, and since we are talking about industrial capability thats the relivant point.
What does defeat mean to you?

Perhaps they used the DS because they didn't want to risk loosing a large number of lives in an attack if Earth had a large fleet.
No trees were killed in transmission of this message. However, some electrons were mildly inconvenienced.

We're talking about industrial capacity regarding constructing and replenishing a large fleet. The building of the Diet Death Star on pre-tooled lines isn't germane.

IIRC, the reason for the deathstar was because they weren't planning on just attacking earth, they were going after every earth colony too, attacking that many planets/stations w/ ships would cost quite a lot of time and resources, as oppossed to a machine that can destroy the entire planet within a day.
In the beginning the Universe was created. This has made a lot of people very angry and been widely regarded as a bad move.

well we don't know enough of course to conclusively answer, too many extraneous variables, but in the warped trek that lives in my head and comes out to cheer me up when life gets jiggy, the xindi collective fragment after prolonged assaults and a war of attrition with the klingons, to the point of the reptilians and insectoids arresting many dissenting xindi-arboreals and xindi-primates as enemies of the state and eventually kickstarting another xindi internal conflict.
Then the romulans pop along and get very drunk and start dressing up as xindi-birdmen and dancing to kelis' ''milkshake'', at that juncture, i fall asleep...
