I suppose a German might take offense to 'kraut' as well, because, as Rochey pointed out, those terms were indeed used in an offensive context during the war.

Exactly. I wouldn't take offense at the word "Yank," unless it was clearly meant as offensive, because the etymology of the word doesn't derive from a derogatory context. The term "Jap," while technically just being short for Japanese, patently DOES derive from a derogatory usage.
