I haven't found local pizza joints to be better 95% of the time. Usually it's crap. Greasy, thin on toppings, too much garlic, overcooked, seriously, if your mozzarella has turned yellow you fucked it up. Maybe it's because it's Florida but local pizza joints almost universally suck. Dominos is garbage, I'll agree. Papa John's and Pizza Hut, eh... they're uninspired and a bit bland. They go to far in the opposite direction of the local joints but the end result isn't inedible like many local spots. Probably the best Pizza locally is Mellow Mushroom which is a chain but better than average.

It is because you're in Florida. In the Northeast, local mom-and-pop pizzerias run the gamut from slapdash boardwalk shills to dive-looking joints that serve what could only be considered gourmet flatbreads. Just an hour ago, I had a couple of slices of chicken-bacon-ranch white pie that had the attention to flavor that I've seen before in one of Lagasse's restaurants.

Do you mean you put a pie with cheese and chicken in the oven, or a cheese pie and a live chicken?
