From the films, Wedge Antilles - he fits in perfectly as your bog standard redshirt, but survived the entire trilogy. He even survived two Death Star runs - not even Luke managed that.

You know, when I was a kid like every other kid I wanted to be Luke. Lightsabers, the Force, and all that jazz. As I got a little older I drifted away from that as I got to know myself, so I can say with certainty. I am a Han Solo fan. It's that simple.
Moving into the EU, I'd have to go with Corran Horn, though.

I have two, both from the EU.
Number one, Tenel Ka. The absolute pinnacle for me. She is so cool. Best part is, I read the YJK around the same age the characters were. So as I aged, so did she.
Right below is Lusa. One of the few good things from the Crystal Star. She kicked butt, came back in the YJK and looked poised to break out... until Troy 'kil 'em all' Denning killed her in SBS. Fuck. You. Denning.

Wedge is pretty bad ass. But I really liked all of the Rogue Squadron and Wraith squadron guys. From Janson to Kell they're all pretty cool. But Piggy is up there for sure. He rocked.
AFAIK there's no literature about him but Xanator has to be kick ass. The first Dark Jedi ever. I was just reading about him as I went character hunting for the crossover RP's next stop. I didn't pick him but he was tempting.

He's like the last DJ. Damned good, but bucks against the establishment. A shame, too. If there was more like him on the Council-or if he was on the Council, things might've turned out differently...
