It's possible stuff that's already out will stick around. But companies have stomped all over fan material in the past *cough*Games Workshop*cough* and with CBS's new "guidelines" they might already be in that process.
So is there anything out now that someone should see?
I'll give a shout out to "Star Trek: Of Gods and Men" a fan production that features a number of old cast members and heavily references old TOS episodes. It'd probably be utterly confusing to someone not versed in Trek, but I think you guys will do fine. They followed up with "Renegades" which actually has higher production values, but goes with a rather unTreklike (but much much more common in the genre) angle of following a ragtag crew of Mary Sue misfits.

TBF, GW used a combination of arcane British copyright laws, German insensitivity to those laws, and the naievete of the flimmakers to legally (if party-pooperishly) put the kibosh on those fan projects.
In any event, I haven't seen any fan-made project that I liked. "Axanar" seemed likely to be the closest.
