I thought it has worked on a fairly wide variety of species. Does anyone recall a sample of different things on which the neck pinch has worked?

Well, it worked on Humans and Human-like species. I'll look around and see how many there actually are.
No trees were killed in transmission of this message. However, some electrons were mildly inconvenienced.

And I suppose since it is pretty much on the spine any species with a spine (like 98% of everyone we saw) could be taken down by it. You might have to wiggle your finger around a bit but...

Really, though - have we seen it done on a Cardassian before, for example? As a reptilian species, there's a possibility that a Cardassian would have ganglia in alternate places, or redundant ones which would take over for the affected plexus. Any canon one way or the other?

I remember Spock did it on a horse, or some sort of equine creature, on ST:V, and equines aren't similar to humanoids.

Horses are vertibrates just like us so it could still work.

I don't think the question is one of biped or quadruped, or even if the victim is vertebrate; rather, I would think that it's a question of how many, how developed, and where the spinal ganglia are.
