I'm going say the whole part with the Enterprise-B.

The Nexus - specifically the interaction between Kirk and Picard. Shatner got some great lines for those scenes.

"I was out saving the galaxy when your grandfather was in diapers. Besides which, I think the galaxy owes me one."

Saucer crash!

I had no idea going in that they were blowing up the E-D in this movie. No idea about the saucer crash. I watched the whole sequence slack-jawed with amazement thinking "Holy crap!"

E-D blowing up, and the saucer crash. You know you're in trouble when your calm, cool, and collected android says, "Oh, sh*t". I was in stitches the first time I saw that scene!
