Personaly I'd have four. One in the Saucer and Engineering sections that are both on simultaneously, and another two backups on standby to take over if needed.

Actually if you go by the TNG blueprints they already have the space in the engineering hull, it's just filled with dead weight instead of a forth core.

I'm thinking this is leading into the poorly thought out GCS design again. Well, let me ask you all this. This is the TNG warp core. The one that breaches if you fart in engineering. Do you REALLY want more than one aboard??????
