Oh, and this is IMO perhaps one of the best fan made deck by deck illustrations out there, comparable to the E-D blueprints:

I think I've found something that could be useful for refference work, though.
The guy who does the Starfleet Museum website made up some complete blueprints for one of his ships. They seem very good to me, and I figure they could be used to give us a rough idea of the possible layout of the E-E.
