Seems to me that the only difference (in principle) between today's 3D printers and Star Trek's replicators is that today we use a print head to assemble the item particle by particle, and in Trek they use little transporters.

Just build the hotel underground. Then you don't need to worry about how it holds up. Just dig an Enterprise-shaped hole and put it in there and let the ground hold it up. Use big LCD screens for the windows.

I'll assume you meant the Enterprise's sensors. That is the most logical explanation. The Enterprise scanned the Vulcan ships, detected 2000 romulan lifesigns and various weapons and whatever other gear they had.
